Double Baked Granola

     ooooo Baby - I am pumped about this recipe!  Double baking granola is not something I've seen before but it's brilliant.  And totally not my idea- the credit for this recipe goes to Nicole Boileau, a great friend, fellow RHN and superstar yoga teacher.  Oh, and she's a health & wellbeing writer too.  And an amazing photographer...point being that she's a busy lady!  Unlike Niki, this granola is low and slow... It's so satisfying I could eat it three times a day (not saying that I've done that... ehem...)

  If you haven't made granola before don't worry, it's super easy and pretty fool proof.  Granola is versatile, don't have walnuts? Great! Throw in some cashews or whatever you have on hand.  Don't be afraid to be a little adventurous!

Double Baked Granola

4 cups oats, the regular kind, not quick cooking
2 cups mixed nuts- I used cashews, almonds, and walnuts
1 heaping cup big flaked coconut (it's totally worth going for the large ribbon pieces)
1/4 cup hemp hearts
1/4 cup sesame seeds
1/4 cup sunflower seeds
Handful of pumpkin seeds
1/4 cup raisins (ones without oil added)
3/4 cup goji berries
1 cup dried figs, diced
dash sea salt

1/2 cup maple syrup
1/2 cup coconut oil (or use butter), melted

  1. Preheat the oven to 300F.  Toss together the oats, coconut, nuts & seeds and spread out evenly on 2 baking sheets.  Bake for 10-15 minutes, stirring once or twice.  Meanwhile, melt the coconut oil (or butter).  (Note: I mixed all of my ingredients together, except for the syrup and oil) right at the beginning - this is okay but my goji berries got burnt and made the rest of the granola have a slight burnt taste...)
  2. Remove from the oven and carefully place back in the bowl, add the rest of the ingredients and stir to coat.  Taste a bit to see if you need more salt
  3. Place back on the baking sheets and continue to bake for 20-40 minutes, stirring a couple of times.  Keep an eye on it after the 20 minute mark.  The granola should be a dark brown and still be slightly wet to the touch when you take it out (it will dry as it cools).
  4. Press down with a spatula, let cool completely and serve with greek yogurt, milk or your favourite non-diary beverage.

I'm going to go eat a bowl right now.
